I should say I disagree with most of your play frequencies...

Nc3 (intending the winaver) is a sharp game, with a lot of possibilities but asking players to engage in very complicated positions (and labyrinthic theories)

 

The Tarrash is not only closed, c5 or Be7 can give a flexible game too

 

And, finally the setup you propose for the exchange variation is far from the best tries for white...
