Does anybody know of a book on the Modern Benoni which also covers the Snake variation, i.e. 5. cxd5 Bd6 rather than d6?

Out of 250+ pages, Psakhis gives three pages to the Snake Benoni in The Complete Benoni. You'll probably be better off studying the games of a Snake specialist, such as Normunds Miezis. Edit: Gashimov seems to experiment with it as well.
