Which move is the strongest in this position? 8... Qc7 or 8... h6 or 8... Rb8 or even 8... Qd5 ? What do you think?

Rb8 has the highest win percentage and is the most played move according to the Game Explorer.

I also consider Rb8 to be the best.

I think I fond stronger answer to your 11. b3 - 11... Nf4.

Nf4 may very well be stronger, 11...Be6 is simple but also appears to be strong
