a question about french defence

in the French defence, how should black respond to 4.e5 after,

1.e4  e6, 2.d4  d5, 3.Nc3  Nf6

4. ... Nfd7 5. f4 c5 6. Nf3 Nc6 7. Be3 and here black can choose between a6, Qb6, and cxd4 all of which lead to an approximately equal game I believe.  This variation is all about black counter attacking quickly before white has a chance to build up and launch a kingside attack.  Main point though is that white is trying to attack kingside in most variations and black is trying to counter either in the center or queenside depending on the situation.
