only like 1 percent of players even use Bird's I've seen it once OTB...

Bird's a waste of time...White by then lost a tempo on the very first move...He's got a cramped position by move 15 while Black is just too anxious when to breach the battlefield...If Bird occurs OTB I like the chances of Black's..
It was quite popular in the Romantic 19th century. But few serious players try to earn a living from it today for the reasons you point out. It is sound, but has its problems and Black has no special worries except from a booked-up specialist.

I think the b2-bishop is usually better off on e3 in this variation of the Bird. Or else, play h3 before moving the queen to f2. In the position you give, black might have a cheeky knight with Ng4 followed by Ne3.
