In speed games I play the Colle-Zukertort because it's on the rarer side and the move order stays the same pretty much no matter what. It also offers opportunities of a fierce attack on the king. Only black's basic structure is shown.

Coincidentally Lydia, I'm also a big fan of the Pirc (and King's Indian) which is great for blitz because of the reason you mentioned. However, I play not only as a speed weapon, but also in longer games.
