For me, I would say the Caro-Kann. I've tried a number of ideas against it, and right now I'm using the Panov-Botvinnik, but in general it's not an easy opening to deal with.
I'm trying 1.e4 c6 2.Nf3 d5 3.Nc3 lines. The idea is in delaying d4, you get a little faster development, and if your opponent plays robotically, as if there's no difference, you often get a big plus (this is mostly a benefit in blitz).
If they do know the lines, or even just play reasonably, black equalizes with no problems, but at least there are different ideas than the ones everyone seems to know and play over and over endlessly. One thing I like is the possibility of two bishops in some lines for example.

Your typical counterplay is at the queenside, and the c4 pawn in particular.

I have that book. I just don't like it when white avoids contact and things get positional. I suck at quiet positions or positions that require quiet manuvering. And then as usual, I do something stupid to "liven the party".
As white I play 1. g4 and that works against every response.
As black, believe it or not ...1. g5 works against everything except 1.Nf3.
1. Nf3 is the toughest I've seen.

You could try the following line in the Advanced. Watson, a renowned authority on the French Defence describes it as the best way for White to get genuine chances in the Milner-Barry. It is a line you should get to play, it may surprise some French Defence players, plus there are 3 videos on it on the net.
The wayward queen attack against the sicilian (1.e4 c5 2.Qh5). Of the handful of games in chess explorer, black has by far the better of it. I just won against it, but it had many clever pitfalls. My win was more about opponent mistakes than the soundness of the opening. Any ideas/experience?

i use a bit different move order, so i can avoid d6 and maybe later go for d5 directly
I think the Catalan is tough. I don't get to face it enough, and when I do it is usually a relatively strong player playing it. Maybe the 4... dxc4 and 5...Bb4+ lines I am playing are not the best, but it seems that white is always ending up with a slight pull.

For me it's totally the Sicilian defense. Kan variation to be exact. Either that or 1.c4 for me when I'm black
