anyone know any good gambits that could happen often?
Queen's gambit is my personal favorite, and is a relatively popular opening.
I also like the danish gambit, though you don't see it very much. And if you do, black usually opts to play a half danish, or decline it altogether.
I like the Lativan Attack. It is a gambit and it will happen quite often.

I like the Hammer gambit, Nimzowitsch Defese with Kennedy variation (B00):
1.e4 Nc6 2.d4 e5 3.dxe5 f6 4.*
would that happen often?
