    Philidor Defence with d6 would be the main choice then.

    Learn the Ruy. A weird line like the Bird's (3...Nd4) maybe, or just the main line Breyer or Tchigorin. When you don't fold after a dozen moves, you start to frustrate your opponent and then the fun begins.

    That or the French Defense.

    I actually like the Ruy as black, around move 15-18 this looks quite promising IMO.

    Like any chess opening, you have to be careful, but there are enough sharp lines that aren't what White was after on move 3, that you can take your pick and have fun:
