The French, Caro-Kann, Scandinavian, Owen's Defense, Alekhine Defense,

Queen's Gambit Declined, Slav, Semi-Slav, Dutch, Nimzo-Indian, Queen's Indian are all light-square-oriented defenses.  Presumably there are some others. 

There are also openings like the Pirc and Modern that are not necessarily played mainly on a particular color.
