What is up with this King's Gambit, I just tried to defend it and lost horribly, then I try and use it and would have lost horribly if my opponent wouldn't have made some completely out of the question mistake. How do you defend it is what im trying to ask? My opponent played like so.

Oh yes and I learned a chain of pawns fails against it..

I am in your position, a hater of the King's gambit lines, accepted or declined. In the first one after 2...exf4, I usually play the straight up d4 to get center control. If they still play Be7, then you go ahead and capture that pawn. In the second one when playing against a king's gambit, I usually respond 2...Nc6. White is likely to respond 3. Nf3 in which you can reply d6. But I aint a really strong player, and it's only what I tend to do in a King's gambit situation. I dont usually play into those lines.

Hey, don't play the KG unless you know the theory behind it. Usually, white tries to target the f7 square and develop quickly. He doesn't care if he can't castle, or whatever. White may sometimes gambit, for example, a knight (like in the Muzio Gambit). The KG is only for fearless attackers! In your first game, I already explained that white usually doesn't care if he can't castle. The second? Play d6. It could transpose into the Vienna Game. Look up the KG on Wikipedia and use this opening database for opening lines. (Don't forget to set the book to 'Shredder 11'!)

I have a solution, why not play a4 when your white. In that way if he checks with his bishop you take with your rook.

Well personally when playing white I always play 4. Bc4.  Attacking f7 quickly is a key in KG.  If he tries 4...Bh4 I simply play g3, and after he takes I castle.  Down two pawns but an active f-file against a greedy player can turn into an easy win.

And again, in the second game I'd play Bc4 then d4 kicking the bishop back.  If you're going to play KG you have to be willing to sac a lot of material...I find often the queen, k.s. rook and light bishop are the only pieces that really matter in short blitz games (I don't know where your games are from, but if they're corr. or standard games it's a different story)
