Can someone help me understand the theory behind sicilian dragon, and if it has any flaws.

I will answer the second part.  Of course it has flaws.  Every move has some flaw that can be exploited.  The Sicilian Dragon has a reputation for getting attacked on the kingside.   The move ...g6 weakens the castle area.

Never play e5 in the SD.

Do not trade g7 bishop for a knight.

 Correct, but dont be afraid of changing a Rook for a knight, lost a game for not thinking that was a move my opponent might do, it might be dangerus even if you have not castled on the queenside.

i agree with dwaxe except that in one of the yugoslav  variations (9. 0-0-0)we play e5 at a certain point otherwise its a good advice.....another most important point (in my opinion) dont be passive at anytime in the dragon, keep on attacking at the queen side , if u waited a second u willl find urself quickly slaughtered.....its a v sharp line that u should always be alert.....if u want a quiter game go for the accelerated or hyper accelerated dragon
