Why do people often capture Knights at first than saving their Bishops?

    At the initiation, I brought out knights. And that person brought out bishops to capture my knights. But why? Love to know.

    In games with long time controls end game bishops can often be stronger than knights. In Blitz/Bullet, players often value knights with higher value.
