Why black do first moove Bg4 instead of Qf8.

1st

got it in 1 try.

No. 1 Rf4 Nd7 2 Qxh7+ Kxh7 3 Rh4#

Look back at the answers. Short 1...Bg4 means mate in 5 (as requested). 1...Qf8 is a mate in 4! That's the difference!

What if black answers the first move by g5 ? 

1- Rf4  g5

and black continue by

2- ... Rg6

I think the mate threatening dosen't exist anymore !

What do you think?

Take a look at the position after 1...g5.  Look for a different type of mate other than the one the puzzle demonstrates.  You should find it rather quickly.
