why didn't black take the knight when white played Nf7+?
Because it is a double check and the King has to move ...

I'm at a loss to understand how that works ! Once white's knight takes the queen, how does black 'save the day' ?
1... Nh42. Nxe7 2. Rf5? 3. Rxh4+ Rh5 4. Rxh5#
Double check is the key.
