In this game after nxe5 qxg2 mate was blundered two times. AS bad as moves computer plays, it won't miss mate in 1. So the game score is probably inaccurate.

I'm not sure this is true on Easy Level. I've seen multipes times people post examples where the computer failed to defend against mate in 1. So it doesn't seem impossible the computer fails to play mate in 1.
As for the thought process during the game.
First, kNight moves are abbreivated with an "N" because the "K" is used for King moves.
7. g3 to open up g2 for the bishop. This doesn't go along with your earlier move of e3 to open up the King's bishop. It can only go in one direction.
8. Nbd2. This is a good move and you mention that it protects the knight on f3. Did you notice that it also protects the bishop on c1? This was very important.
13. Ne5 attacks the queen, but allows your opponent to play Qxg2 checkmate. When you attack a piece, always look to see how your opponent will deal with your threat. Especially look at captures and checks.
14. exd4 allows Qxg2# as well, but also overlooks the possibility to play 14. Bxc6 Nxb3 15. Bxd7+ Kd8 16. axb3 where you have taken two of your opponent's minor pieces.
16. Rd1 you noted that you forgot to the the knight on e5. Also, in principle, your rook was better on an open file rather than behind your own pawn.
Very new to chess. Now that I can beat Silly difficult level pretty much 100% of the time [lol] I've moved on to Easy! I detailed my thoughts behind most of my moves to hopefully get feedback on whether or not I'm making my moves with the right mindset. If there are other things I should be taking into account that I may have missed, please feel free to criticize.
Yes, computer made some terrible moves. That's what I like about it at this stage my playing haha.
