Pawn Power by Kmoch.

Why? It is CHALLENGING to read (in the beginning) but you start seeing where the ideas of so many openings come from. So the next time somebody goes "blah-blah blah and in this variation of the Najdorf, you have to do so and so on Move 12 and put this piece on this square" you can tune him out and tell yourself that you can work things out on your own and rest assured that you didn't have to memorize a ton of theory to become a decent player.

The Idiot's Guide to Chess by GM Wolff is an excellent book. It covers just about everything you'd need to know until at least a decent intermediate level. It should be everyone's first book of chess.

Susan Polgar's A World Champion's Guide to Chess is also excellent. It teaches in a somewhat unique way through pattern recognition and includes some themes not often found in other similar-level books, such as defending positions (if I remember rightly).

Right now I'm reading Paul Littlewood's Chess Tactics. It's an excellent tactics primer, and includes such useful themes as how to exploit the tactics to best advantage, and how to defend against them when faced with them (this latter theme is not often covered by tactics books).

For more suggestions, you could see my list of chess "classics" on Amazon:

http://www.amazon.com/Chess-classics-other-must-have-chess-books/lm/RFR60OIPYCL7T/ref=cm_srch_res_rpli_alt_1

Admittedly I've not read all those books, but I have striven to include all books which are by common consent considered classics (whether modern or otherwise) or which are otherwise in my opinion must-haves.
