This was a blitz game I played and I was down to the final seconds of the game and I finally ran out of time and I was surprised to see "draw by insufficient material" at the end. Why was this a draw??

I am pretty sure that if your opponent cannot checkmate and you run out of time, it is a draw.

That is correct. If a player's time runs out, but his/her opponent could not win by any sequence of legal moves, the game is drawn. Since checkmate is impossible with only a bare King, White would not be able to win on time at that point.

Actually, Chess.com follows a slightly different rule. If White had had a King and Bishop (for example), and Black runs out of time, the game is drawn, even if a checkmate could be achieved by any sequence of legal moves. The reason for that is that White's prospective checkmate would be extremely impractical to achieve.
