I particularly like the Chess Variant Pages - they provide descriptions of how to play literally hundreds of varieties of chess-related games, ancient and modern, which has long been a particular interest of mine.

I also enjoy Ed Friedlander's Java applets site, where you can play many variants against a computer. The applets are generally weak opponents, but still fun to play:
