Camel, for some Arabian themed set (not that the Arabians are not famous for their horses also, but as an alternative a "desert ship" is perfectly doable).

Unicorn, for a mythical creatures theme.

A snake (who slithers between pieces) can work too.

A dragon would be my choice.  Then it could fly around and land on top of the castle to share a square. Oh... actually, that would be a cool idea.  The knight is the only piece that can "jump" over other pieces.  Why not have a piece that can "share a square" with specific other pieces (or maybe not specific ones).
