I play a afraid of tactic and queen exchanging player today. Any ideas for a set up for white? Slow attack, low risk and with okay endgames. But still exploiting my opponent weakeness?

You want an opening that will get you to an okay end game?  And!  You want it to be low risk...slow attack?  And!! you want to exploit your opponents weaknesses?

No opening exists that will get you to a "okay" end game. And the rest of your wish list is unrealistic too.

I got what I wanted. This pawn sacrifice in french. Both lead to king attack, and often to good endgames. So actually it does exist. :-)

well i recomend with black the lasker system or the tarkatower makaganov Bondaraevsky  both ofof the queens gambit declined against d4, the caro-cann against e4. Oh and if you dont know below are the starting moves of the Tarkatower and Lasker variations respectively.

    d4 d5 c4 e6 Nc3 Nf6 Nf3 Be7 Bg5 h6 Bh4 o-0 e3 b6

    d4 d5 c4 e6 nc3 Nc3 Nf6 Nf3 Be7 Bg5 h6 Bh4 Ne4 Bxe7 Qxe7

Why opponent is playing passiv and endgame/drawish else it wouldnt be possible, so that much is true.
