A little Birdie told me there is Three way chess! I've only ever seen one board in really life. Can anyone fill me in on how it is played?

Why not skip directly to 4-way chess (aka Transfer Chess)? http://everything2.com/e2node/Chess%2520Variants    Two couples can play thus avoiding any ménage à trois accent complications.
