Waiting to Castle

I see many players will clean out their back ranks except for their king and two rooks, so that they may castle on either side.  Seems they just wait and will try to castle on the better side depending on what develops.  Is this wise to wait so long to  castle?

Heh, that's what I thought.  Sorry PFren, I don't mean to keep putting up such general questions.  Is it wise in general to wait and see where your opponent has strenght or is attacking AND THEN castle on the other side?  Is this better than castling quickly and going from there?

I know,  you want a specific example.  Here's one  -  http://www.chess.com/livechess/game.html?id=321016775 (this isn't one of the better cases though, forget about the latter part of the game)

Thanks Splane, nice and informative article.  It confirmed my suspicions.
