Now, it's very nice that our chess.com email has a spam filter that sends emails to the spam folder, but I personally don't have my address in the hands of any spam servers anyway. My problem, therefore, is that everything that does end up there shouldn't. Is there a way to prevent the mail from a certain email address ending up there?

Making the sender a contact doesn't seem to work, either that or I've spelt it wrong (and I don't think I have).

You can get a chess.com mail account. On your home page, under My Messages, it says "My Mail". You just click on the thing beside that to set it up.
