I have 10 unrated greeter games going on right now. Only 1 person  seems interested as we have made several moves already.

I think a new player will show interest in playing an unrated greeter game by making his/her first move within the first 24 hours. If the new player has not made the first move within the first 24 hours I think it most likely reflects lack of interest in an unrated game and will result in a timeout after the 3-day time limit expires.

 

Yes, it seems your observation is fairly accurate. I have also experienced the same trend.
