If I keep the connection active and don't resign against a live chess clock cheat is it possible to probe his computer to see how he does it?

No. Unless you're already fairly experienced at hacking someone's computer.
In which case I'd guess you'd be able to come up with a few different tries to do this time cheat thing yourself.
