To be honest I have no clue what level  my opponent was.

He was ranked 2nd at the end of the tourney.

My opponent reactions was priceless, first when I sacrificed my queen he laughed, he quoted" you've given up eh?" I replied"  well......" I then moved my knight to checkmate, he said it wasn't checkmate at first, he got round an official to check it. Once he agreed he slammed his king on the floor. LOL that was funny!

I agree this was a beautiful and amazing checkmate, but what if he had played Be7 instead of axb5?

It wouldn't have been mate, as far as I went, although I guess you would have enough advantage to win the game, but as einstein said, "the war isn't over until the king goes down", so you could always have blundered...
