i thought the last move should have been Qb8....which would seal the game for white rather than keep the game going and taking the rook

Qb8+ doesn't seal the game, it just gets another bishop because black can do 1. ...Bf8 2.Qxf8+ Qg8 3.Qxg8 Kxg8 4.Rxe7

Actually it does seal the game for White. Here is how I see it:

1.   Nxg6+ Qxg6 2. Qb8+ Bf8 3. Rxf8+ Kg7 4. Rg8+ and Black loses queen and possibly more.

I probably would have played 1. ...hxg6 than Qxg6, if I were Black.

You might or might not have realised this, but that also loses for Black (though not as much) because 1. ...hxg6 2.Qh4+ followed by 3.Rxe7
