How can white stop black's passed pawn?

but then after 4. b7, white will lose the knight, right?

I agree. White king can't cover both so the knight is lost.

Isn't the better question why the pawns are going the wrong way? ;)

Either way, after 3...b7 4. Nb8 will block the pawn

white now has a very strong advantage

whites 2 knights and king will be sufficiant to stop the pawns on b6 and f5, and the two passed pawns give white a fairly good advantage.
