Why doesn't White take the Rook with the pawn on move 3?

    After white plays 3.cxd8=8, Bxd8 the R v B endgame is a draw.

At the end position if the king moves to the F file then Rf5+ forking the king and bishop, and if the king moves to the d file then Rd5+ forks the rook and king winning (if Bxe5 then cxd8=Q wins).
