Play French defense, Tarrash variation, a staple of many old Karpov-Korchnoi battles. Small tournament, only 4 players, starts ASAP.

You can organize a tournament, like this, it will help you to learn it. Also you can start a new game  with "advanced" options and choose the variation of the French you want to try.
