I like playing against the King's Indian defense, and it's even better if I can get into the four-pawn attack. The Saemisch attack is very good also.

I don't really enjoy seeing 1. ... d5 because black is likely to put up a more fierce resistance (slav, meran or q.g.a.) even when white is playing against a less-skilled opponent.

I'm perfectly at home playing the Queen's Gambit no matter where it leads. My favorite opening is probably the Trompowsky though. It leads to very distinctive play and though uncommon is sound, dynamic and aggressive. I often play the Levitsky and Hopton attacks too.

I open with d4, followed by e4, then Nc3 and Nf3, leaving an empty box in the middle. What's this opening called?

oh, that usually happens. So I move Nc3, then Nf3, and if by then I can still moved5, I move it.

Blackmar Diemer Gambit.. although Nf3 only arises after something like 1 d4 d5 2 Nc3 Nf6 3 e4 de 4 f3 ef 5 Nxf3    (ie Nf3 ?)

How about the London System (1.d4 d5 2.bf4 nf6 3.nf3). Very safe and very interesting

I like playing against Queen's Gambit Accepted. It tends to give white a very nice positional advantage.

Black's best defense may be the Benko Gambit.  It can be tactical, or a longish type of draw.  It can also be played with colors reversed.  Often the best White can do is offer the draw.

If you are looking for a Black Defense I recommend Tal's games with the Modern Benoni Defense, Alekhine's games with the Nimzo-Indian Defense (2 losses in 40 games) and Lasker's games with the Albin Counter Gambit (no losses in 7 games).  The Albin used to be a surprize weapon but is very standard now.  Black plays a pawn down and the moves are simple for both sides.  If you play the Dutch Stonewall Defense as a forcing opening, so did Botvinnik.

Tal, Lasker, Alekhine and Botvinnik were all world champions.

Any questions?    Consult them.
