You'd have to ask Erik about it. I think they scan people's games for fishy (too good) moves and/or serieses of moves, especially people over 2000 & anyone who's been reported for suspected cheating by another player.
Not sure how you would know someone was doing that.
I think most cheaters cheat by using chess software to figure out their moves.
