Pear and ginger tart
Prepare a short pastry shell, substituting Copha for a nice coconut flavour, and wholemeal flour to add crunch.
Using several ripe Bosce pears, cook the flesh to bring out the flavour. Thicken with cornstarch and arrow root and pour into the shell. Arrange some pear slices on top and top with slivered ginger. Glaze with a little sugar and bake.
