So you're wondering if there's a cake that's easy out there. Well the answer is yes. In fact there are (in my opinion) 2 very easy and simple cakes you can make. 1) the hurry up cake. Does not sound like much but this batter is really good. Not only can you make cakes but you can use it to make wonderful cupcakes. 2) The coffee cake. Very simple and tastes delicious. You can probably make the recipe suitable for cupcakes....never tried. Today you'll be learning cake number two. 



Cake Batter:

2 cups of flour

3/4 cups of sugar

2 teaspoons of baking powder

1/2 teaspoon of salt 

1/2 cups of butter

1 egg

1 cup of milk

1 teaspoon of vanilla

Lemon zest- optional 


Cake topping:

2 tablespoons of flour

2 tablespoons of butter

5 tablespoons of sugar

1/2 teaspoon of cinnamon 

1/4 to 1/2 cups of chopped nuts-optional (a good idea tho)


The How To: Cake Batter

Shift your dry ingredients. Combine with the rest of ingredients. Pour in a buttered pan. We had to make a double batch for a full 9x12 ish pan....depending on your pan you might need to double.

Cake topping

Blend/beat until in crumbles....sprinkle over batter. You might need to double this too.


Bake at 350 for about 25 minutes or until insides are firm.


Notes: My sister used lemon zest in her verion. I don't particularly like it but if you like a citrus tang go for it.

            Nuts are highly recommended especially the use of walnuts. If you're allergic, do not fear! The topping will taste just as good with or without nuts.
