Last night I was pondering on what to make for dinner. I needed a recipe for just my sister and me but many recipes needed 2 pounds of chicken. After a long, difficult search I can across a site called 101cookingfor2.com (something like that...I'll revise this later). They had many nice recipes for just two people and so I found this. Now at first I thought this wouldn't turn out right. It just looked like crock pot chicken and that isn't the best thing in the world. Boy was I wrong. It turned out really well...so good that my sister declared that this was how we were going to eat chicken from now on.


A pack of chicken drumsticks (you can use thighs)

[For Seasoning] (you can use your own but this was good)

A little less than 1 tablespoon of kosher salt (one was a little too much)

1 teaspoon of black pepper

1/2 teaspoon of garlic powder

1/4 Cayenne pepper powder 


The How To:

Pat chicken legs/thighs down so that it's really dry. Cut away extra fat or loose joints.

Sprinkle on your seasoning or the seasoning I described above on both sides. Give the legs/thighs a shake to get extra seasoning off.

Prepare a baking sheet by placing tin foil on it and then by setting a rack on top. Spray with PAM (you don't really need too). Place your chicken on it with the biggest parts facing the sides. Bake for 30 minutes or until there's no pink left at 425 degrees. Enjoy it with some steamed greens.

Don't mind that awful looking glop of orange on the plate lol:
