Have an "easy opponent" or a challenging game?

I played a few games tonight and was kind of irked by mainchat convo regarding "easy opponents ".  I know i get challenged because I'm Bambi in the predator/prey scenario.  However, I would rather play someone higher than me than drop down 200-300 points and get that win.  When I play someone, I try my hardest to look at their moves and also use every game as a learning experience.  In my humble opinion, me playing someone who is lower just because I can get the win makes no sense.  And to call someone an "easy win" shows no respect to your opponent.  I've been in observation mode the past few days and have been surprised at some of the wins that I've seen come from underdogs :)  To me, chess is a game that will never be perfected.  What do they say, "It takes weeks to learn and a lifetime to master?"  In order to do this, you need to remain focused, study, and be challenged. Well, enough of my pseudo-sleepy rant.  Tonight, I am listening to some metal.
