How to teach chess to seniors??

I'm exploring ideas for volunteering in a local assisted living center. The residents are all over 65, and most of them are in the 80-95 range.  Many suffer from mild-to-more developed dementia, loneliness, etc. One idea is starting a small weekly group to teach "how to play chess" and provide a safe place to play with each other even if they have trouble remembering how to do it.

Can anyone recommend resources for a curriculum / teaching track / ideas for teaching chess to people like this?  Google is very thin on substance for this quest. I did find one study of some help:
