Choosing caro-kann or french at low levels....

I've read some posts along this months that stronger players don't advice to specialize at those openings so early.

Well, if someone at low level doesn't like the positions after 1...e5 or 1...c5 should he change his repertoire to something he likes ? Or play the main moves as that would be more beneficial in the future ?

You should play 1.d4 to get experience in tactical positions. At your level just follow the opening principles and you'll be fine.

As a Caro Kann player, this is the line I hate the most.

1. e4 c6 2. Nc3 d5 3. Nf3 dxe4 4. Nxe4 Bf5 5. Ng3 Bg6 6. h4

Bf5 isn't necessary in that exact position, playing Nf6 after the capture on e4 should be solid for black, although instead of dxe4 I like Nf6 for black.

3. ... Bg4.

You can try both in blitz, otb, bullet to gain experience and knowledge in both positions. You will see the differences in pawn structure and piece placement. You will learn the differenct plans. After that you can decide which opening you like most.

Indeed, 3...Bg4 4. h3 Bf3 5. Qf3 e6 is much better.
