We've got a pretty good answer to this as of recently. The amazing thing is that the match predictions between the players match up almost exactly with the times those players actually did play (Computer prediction was Fischer over Spassy 60% of games to 40%, in WC match it was 59% - 41% [21.5-8.5])

Computers are becoming able to determine who has played the "best chess" and have come to figure pretty accurately who would win if the greatest players fought each other. I think this is pretty damend accurate. I know some people like the romantic idea that a computer can never determine "the intracacies of human play, and 'you don't know what would "Really" happen" and all of this platitute stuff, but in reality, logic and empirical reality win out in the end. Some players do just play better chess moves than others, and those players would beat the players who played less optimum moves. In the end, the database of a players games lives on forever, and we can examine these games and know how good they really were.
