They start a new account and see how long it takes them to hit a high rating like 2700 blitz.

I believe the practice is unethical and should be completely banned. Disallowing multiple accounts is a common rule for just this sort of farce. Think about all the people's ratings they are damaging on the way up.

... speedrun accounts are created by chess.com, and they return the elo points to the people beaten

That reminds me.  I wrote a long answer on Quora about how one could improve their chess thinking ability. I talked about how one can memorizing positions and blind chess, starting with super simple endgame position. It's here, in your own mind, that you can start to able to disconnect what you see with what you think. In order to think a lot of moves ahead, you need to be able to do this.

But it was partly Naka who taught me this idea. How? Well, he was watching a video of a chess game and commentating. But the angle was horrible---no normal player would be able to make sense of it. That's why when you see a FIDE stream game you can see both players, and the board, but they always include a 2-D view, too.  But, Naka was able to see what was there without the 2D board and reconstruct it in his head in a normal view.  It was just amazing to me. I don't think anyone else much noticed his feat but me!  Anyway, that's actually what he is doing playing with the board up-side-down.

So yes we can learn from watching these masters play. But you have to think. Perhaps slow down the videos. For the most part each time a a player makes a mistake, it can be converted into a puzzle.  Even the next "engine" move can be a puzzle without mistakes.  So perhaps download some GM pgns and do a "learn from your mistakes" with them.  Essentially making puzzles of grandmaster games. Yes, you could that for your own ~<2,000 ELO games, but there will be so many mistakes it almost feels dumb to do any puzzles at all with them.

TLDR: It's of some value!!!

If it was bullet I wouldn't be surprised if naka could get 2400+ saccing the queen. I think even Aman hambleton got to 2000. Not sure how he would do down a queen in blitz, though.

I was assuming blitz

Hard to believe a master thought Hikaru couldn't even get 2000 with queen sac in blitz... 1600 is much worse than you think.

I was definitely surprised he got to 2400 in the end... it's kind of embarrassing for anyone under 2500 lol, but then again, I think Hikaru was also surprised he got that far.

I wonder how far he could get with queen sac in 30 minute games... I think he'd have to change his strategy. In 3|0 he played closed positions, so it bled the clock. In a 30 minute game he'd probably have to be aggressive and try to make a mess of the position.

He should take off an article of clothing every time he loses

Speedrun different openings. I would like to see a Sicilian/Reverse Sicilian speedrun.
