isn't it better to take the knight, the bishop is covering the back row?
Why would it be better to take the knight, when 1. Bf8 is the quickest win for white that is available?
Because why calculate when you can be two pieces up with the simplest possible move?
It's just a very poor problem.
Yes. Perhaps taking the knight is an easier move, and I say perhaps only because 1. Bf8 actually seems rather clear, otherwise it would definitely be easier, but 1. Bf8 is clearly the better move because the game ends quicker. Just a technicality I guess.

For those of you (some have already asked) who liked the idea of R x knight, as i did, the trouble with that as move one is the threat of the black queen on an un-gaurded back rank with a fenced in king in residence.
I disagree. With both, the Rook and Queen guarding the f-file and the Bishop covering f1, the fenced in King is quite safe for the time being. The problem is Black opening up an escape route by moving it's pawn to h6.
