He has black playing 3...,Nxf8 when black can simply play Kxf8 preventing mate.  Furthermore, it seems like black could play 2...,d5 instead of 2...,Rf8 and come out ok.

Prative, your series of moves does not force a checkmate.

Consider after 2. Qg7 that black does 2...d5  That single pawn cuts your bishop off and opens an attack on the f5 Knight with the c8 bishop.  You can capture the pawn, but will lose your pawn and/or bishop, leaving unable to checkmake while in that position.
