Choice;
1. Clean up / or prevent the rat turds.
2. Leave them on the tables and attack the customer who says it's unpleasant.
Many businesses choose #2, and some of their customers continue to stay and defend the business viciously, using personal attack. It's like sweeping even more rat turds towards the patrons who complain about it. Sometimes such patrons leave and the remaining customers feel like something positive has been accomplished. I actually agree, something positive has been accomplished.
Or 3. Leave them on the tables and ignore the customer who says it's unpleasant.
That's the one I prefer.
