French Defense Vs. Caro Kann: Which is Better?

I've been trying to do the French as black, with rather poor results. Might just be my stupidity kicking in at the worst possible times though

I do find alot of people say that French itself is worse, and the Caro Kann is often the better and solid choice to pick

I wouldn't say one is necessarily better than the other. The French used to play my main opening when I was lower rated. Nowadays I mostly play 1... e5 or 1... c5, but if I were to choose to play the Caro or French now, I would probably choose the Caro-kann because it better fits my playing style.
The French is considered to be more aggressive, and the Caro-kann is typically more solid. The Caro-kann has the obvious advantage of freeing the bishop, but you are more likely to get somewhat cramped positions as well. The French is a more aggressive opening, but now you have the trapped bishop on c8.
I would say the French is better for some people, and the Caro-kann for others. If you are a solid and positional player, I would suggest the Caro, but if you are looking for a more aggressive opening, I would say the French.
