+1 There are many types of defense just like there are many ways to attack in chess. Speaking on a macro-scale though (I think that is what the op is doing since there are no specifics given), defending is usually about countering opponent counterplay - before it manifests in many cases. For this reason, defending is actually quite difficult and takes a lot of understanding of the position and what the opponent is doing. Attacking and keeping the initiative is much easier and so that is why beginners are usually taught to attack more than they are told to defend. 

Perhaps others can add to this list, but some good "defensive" players to check games from may be Nimzowitsch or Petrosian. I say "defensive" players in quotation marks because everything is based on the exact position and situation. Nimzowitsch I think was a bit "too passive" at times, but one could interpret "defensive" out of this. Likewise, Petrosian played stunningly in many closed positions that take on a positional nature; this type of play may come across as "defensive" to the untrained eye I think.

Another idea to check 'how to defend" may be to research "attacking games" (since they are easier to search) where the "attacker" lost the game and then see how the other side managed to succeed.

It is okay; but I don't see how this is playing "defense" here? This is actually a book opening and it is still about equal for both sides after 7...Qxf6. The book continuations are usually 8. Nd5 or 8. O-O.
