Coach Michael I think first of all you should go onto your Chess.com account settings and confirm that your selected Time Zone is correct. Chess.com daily counters and limits reset at midnight in your local time zone, as selected by your settings. I hope this answered some of your questions.
Daily streaks

Hey Ishaan. That makes perfect sense, but my time zone has been Los Angeles the entire time. Yes, I checked a few times already. Strangely, my streak used to update at 21:00 Los Angeles time and now (I think) it updates at midnight Los Angeles time. Maybe they fixed a bug.
When does the daily streak counter update? For a while, it seemed to be after midnight New York time, since I usually play a few games before bedtime. Alas the last three days, my streak updates in the morning, despite still playing at night.
What changed recently? Does the site change days at a globally fixed hour or does it depend on the local time for each member? Note: I have not travelled in the past two weeks.
