It’s because they probably know tactics to beating people with high ratings and what not.

If you're asking about arena tournaments, players are paired against opponents close to their own rating. They might not play the highest rated players in the arena tournament.

Swiss tournaments are paired by standings, arenas are paired by rating.

Swiss tournaments are played in rounds. In an arena tournament, you play as many games as you can (or want to) in a certain amount of time. You also get bonus points for win streaks.

How do players with very little rating go undefeated ?
as in 900 rating or 1100 rating winning 8 of 9 or 9 of 9 etc.
