Nobody who ever plays the KG regularly would EVER take on e5. It's a total rookie mistake.
Every line of declining the King's Gambit is worse for black than accepting the gambit. Just check Stockfish. The Fischer Defense is easy to memorize and gives more chances for black. It's not the best response to the KGA, but it's the easiest to remember and still leaves black with an advantage.
People think the Falkbeer is good. It's not. It does have a cool name, though.
