Well to trade is technically a mistake because you are only improving your opponent's position so it would probably be alot or sometimes very short depending on what opening they play.

Here's a game where two GMs make it to move 67 without a capture, then agree a draw.
Just curious what is the most number of moves before a capture at the GM level? I guess most GM's try to get to a certain middle game quickly so captures don't matter but what do you think....I'm not a GM
